Tips & Tricks of the Trade; Snack Time, Banana Pancake Style!!

Food glorious food!! Breakfast is my personal favorite meal of the day.  I have been eating egg whites and oatmeal for far too long now, but it works, so I stick with it. On those days when I just can’t stand another bowl of it, I will flip through instagram for breakfast inspiration.  I stumbled upon a 3 ingredient banana and egg white pancake. So I got in the kitchen to try this newbie out.

 My significant other has a beautiful induction cooktop. He does not, however, have a non stick pan for this. 8 trial pancakes into this banana pancake recipe and I was infuriated.  I mean honestly, I just want one pancake that doesn’t look like a complete unidentifiable object.  I had a little batter left over so I threw it in a mug and placed it into the microwave.  1 minute later I discovered a perfectly cooked soufflé of sorts. This was awesome!!  Only took me an hour and a half to figure it out. If others have already figured this out, well, you are the better man or woman for sure. To save the rest of us time, I am sharing my discovery.

Ingredients ( Makes 2 Servings ):

6 Tbsp liquid egg whites

2 Tbsp ground flax seed

1 whole ripe banana

Mash the rip banana and mix it with the other two ingredients in a bowl.  Place half the mixture in a microwaveable mug in the microwave for 1-1.5min depending on your microwave.  Just make sure the end product isn’t runny. The final result should light and fluffy.

Optional additions:

Vanilla extract

Flavored Stevia

Cinnamon

Pumpkin Pie Spice
